Ingredients
- 1 kg fresh, live mussels
- 1 red onion
- 3 garlic cloves
- 1 large Granny Smith apple
- 1 lemon
- 2 x 15ml spoons oil
- 15g butter
- 1 x 5ml spoon fresh thyme leaves
- 300ml apple juice
Method
1. Clean the mussels carefully under cold running water. Throw away any that are broken or that do not close when tapped gently.
2. Prepare the other ingredients:
- peel and chop the onion;
- peel and chop the garlic;
- deseed and chop the apple;
- chop the thyme;
- zest and juice the lemon.
3. Heat the oil and butter in a large wide saucepan. Add the shallots and garlic and cook gently for one minute.
4. Add the apple cubes and cook for one minute.
5. Add the apple juice, the lemon zest, lemon juice and thyme. Bring to the boil.
6. Pour in the mussels, shake the saucepan a few times and cover with a lid.
7. Cook for about 2 minutes, then shake the mussels again.
8. Cook for another 2-3 minutes, until all mussels have opened (throw away the few stubborn ones that do not open).
9. Serve the mussels and all the liquid.
