A comforting dish – our traditionally smoked haddock is beautiful in many recipes, and while this recipe is great all year round, this risotto is great on an Autumn evening, tasty and filling, this recipe is also good for smoked mackerel, but smoked haddock is our favourite

Ingredients
- 240g smoked haddock or mackerel
- 250g risotto rice
- 1 tbsp butter
- 100g bag fresh spinach
- 1 finely chopped onion
- 100ml white wine
- 1 litre vegetable stock
- 2 sliced spring onions
Method
1. Heat the butter in a large frying pan. Tip in the onion, and fry gently for 5 minutes until it’s softened.
2. Stir in the rice and mix until it’s all coated in the butter.
3. Pour in the wine and let it bubble until it’s almost disappeared.
4. Pour in half the stock. Give it a good stir, then leave it to gently cook for 10 minutes. Add half of the remaining stock, stir again and cook for another 5 minutes. Keep adding stock and cooking until the rice the whole mixture is tender.
5. Peel the skin off the mackerel, remove any bones and flake. (if using smoked haddock, cook first)
6. Stir into the rice with the spring onions and spinach.
7. Cook just until the spinach has wilted slightly.
8. Serve and enjoy.
