Our traditionally smoked haddock is great simply on its own, or in many classic recipes, this recipe is a little different, and the fresh flavours make a great summertime meal.

Ingredients
- 2 smoked haddock fillets, folded in half (delice)
- 1 Lemon Grass, small stick, chopped
- 1 Lime Leaves, shredded
- 2 tsp Fish Sauce
- 2 tsp Lime Juice
- 1 tsp Brown Sugar
- 75ml Coconut Milk
- Small bunch Coriander, chopped
- Small bunch Basil, torn
Method
- Mix the sugar into all the wet ingredients and stir to dissolve
- Cut 4 pieces of tin foil approx. 10 inch square
- Lay 2 pieces of the foil on top of each other and rub a little oil in the centre, place a folded fillet smoked haddock on top of the oiled area.
- Spoon the coconut mixture over the fish and scatter the herbs, lemon grass and lime leaves on top of the fish. Repeat for the other fillet.
- Carefully fold the tin foil over to create a parcel. Roll and seal the foil around the edges tightly.
- Place on the BBQ and cook for approx. 10 minutes.
- Remove and carefully cut open the parcel.Â
